These roasted apples crusted with a delicious marzipan are transporting me back in my childhood

Though I kind of “revisited ” it…to make it processed sugar free, gluten free, dairy free and still full of nutrients.

I remember the time watching my mom stuffing the apples with a mountain of white sugar, a wheelbarrow full of butter before cooking the apples up to melting point…my my it was delicious…but we were not conscious though, it was maybe not as healthy as could be….

Never mind, now that we know the impact of some food on our health…lets use a magic wand…plus some imagination….and here is a paleoliscious recipe for crusted apples

How to prepare and cook your crusted apples

Ingredients for the apples

– 4 big organic apples (I like to cook with not too sweet apples, jonagold for example will melt and give enough acidulous taste to your recipe…when I am in Europe, I use ancient species of apples like belle de boskoop, belles des bois, reinette grises….but lets stop with nostalgia…it is difficult to find these apples nowedays…)

-4 table spoons of apple syrup (see the recipe here). If you don’t have time or do not want to, you can replace apple syrup with a mix of dates and cashew nuts, let it soak in water for a couple of hours and blend it)

-4 table spoons of coconut oil

– grinded vanilla beans

– a pinch of cinnamon powder.

Ingredients for the crust

-1 cup of almond powder

– 1 table spoon of coconut flour

-1 table spoon of coconut oil

– 1/3 cup of maple syrup

How to prepare

-Place the apples in cooking paper or in a mould

-Fill the center with apple syrup up to the middle, then with coconut oil

– put in oven in low temperature, 120 °c or 250°F

-let it slowly cook for 30 minutes, it will give you plenty of time to prepare your marzipan

-mix all the ingredients of your crust together to obtain an homogeneous dough_marzipan

-let it set for 10 minutes in the fridge

-spread it on a cooking paper or a plastic foil to obtain a thin layer

-cut  straps of marzipan

– take your apples out of the oven and dispose the straps on top of the cooked and nicely melted apples

– lay your straps of marzipan dough over the apples

– put back in oven for 15 more minutes

Let them cooling down….it smells so good it will be difficult to wait

I like them lukewarm, but it is delicious cold too
