As you noticed, I am posting more and more paleo recipes….

pumpkin spicy exotic soup

I  just received more allergy tests results, I turn to be allergic to soooo many things…but I want to enjoy eating what so ever… even with the insane list of food I am not supposed to eat right now…

On my way back from the allergies specialist, I stopped in an organic store…and all I found reasonable to buy…was a pumpkin, coconut milk and turmeric, chia seeds and an organic lemon…

Back home, I came up with this recipe from scratch.

What you need to cook this delicious spicy soup:

For 4 servings, half of a medium pumpkin as shown in the steamer basket below:

– 1 lemon juice

– 1,5 cup of unsweetened organic pure coconut milk

– a pinch of curry (upon your taste)

-1 tea spoon of turmeric powder

-1 pinch of Himalayan pink salt.

-chia seed for topping: 1 teaspoon per serving


How to proceed to cook your paleoliscious soup:

-Pour all your pumpkin cubes in a steamer (you could also boil it..but you would lose a lot of nutrients.

-Let it steamed for 15 to 20 minutes until the pumpkin flesh turns soft

– Pour your pumpkin cubes in a blender

– Add the coconut milk, the spices, lemon juice, salt…

– Blend for a few seconds

It’s ready…you just need to add your chia seed before serving

Honestly, this is a very fast and easy recipe, it is delicious and very healthy
