French Gourmet GF Mini Cakes

This recipe is one of my favorite pastries.
15 minutes to prepare
15 minutes cooking.
I use to eat one every morning for breakfast .
It is perfect to be eaten with jam, with melted chocolate, with caramel icing or even with ice cream…to recap, this is the perfect basic recipe you need to taste if you are gluten free.
It is to be noticed, this is a gluten free AND diary free recipe.
To realize these French Gourmet Muffins, here are the ingredients:
– 1/3 cup of corn starch
-1/3 cup of white rice flour
-1/3 cup of almond powder (almond flour)
-1 tbsp of guar gum
-1 pinch of salt
-2/3 cup of brown cane sugar
-1/2 cup of 100% vegetal margarine
-1 tsp of gluten free backing powder
Preparing your mini cakes dough
Preheat your oven at 280 ° F.
Put the margarine in a glass bowl and put it in microwave for 30 seconds for melting…or even better, in the sun…and let it melt…
Mix eggs and sugar together. Add salt
Mix flours and baking powder together with guar gum, once the margarine is liquid, add it to the mix…and blend
Mix everything together and pour your silicone moulds.
Place your mould in the hoven and let it cook for 15 minutes…
Check after 12 minutes, adapt the cooking to the power of your oven…here is the right color you need to get:
This is delicious for breakfast…for dessert….for a little snack to take out…
